Super Bowl Recipes as seen on Global’s The Morning Show (video)

As ‘Queen of the Kitchen’ I like to celebrate Super Bowl Sunday (truthfully, I’m secretly celebrating the end of football season. Shhh don’t tell.) and nosh on healthy snacks and meals.  Dishes that will satisfy your hunger and actually fuel your body while you cheer on your favourite team.  Living in a home with three hungry sports fanatics (ages 13, 14 & 40) means I spend a lot of time in the kitchen.  Clearly, sitting idle watching countless: touchdowns, 3-pointers and/or shoot-outs requires good grub to fuel all the hooting and hollering?!?  It’s a darn good thing I love my main men and enjoy spending hours on end in the kitchen.  Watch as I prepare some of my favourite game day grub on Global’s The Morning Show!!

Super Super Bowl Sandwich  

Dinnertime never tasted, or looked so good!
Cheering on your favourite team never tasted, or looked so good!

A cottage loaf is commonly used to make “party spinach dip”.  This loaded sandwich is a perfect way to use up any leftover vegetables you may have in your crisper and takes only minutes to prepare.

1 large (500 g – approx.) pumpernickel or whole grain cottage loaf

1/3 cup (75 mL) peanut butter hummus (*or regular hummus) OR, stir together: 1/4 cup (60 mL) mayonnaise + 3 tbsp (45 mL) Dijon mustard

2 cups (500 mL) lightly packed baby spinach leaves or mixed salad greens

½ lb (250 g) thinly sliced deli style ham (or other deli style meat of choice)

1 cup (250 mL) grated cheddar cheese

½ cup (125 mL) thinly sliced cucumber

½ cup (125 mL) grated carrot

1 small red pepper, seeded and thinly sliced

1 avocado, pitted and thinly sliced

Cut a round cap off the top of the cottage loaf.  Reserve top.  Hollow out the inside and top of the loaf to make a bread bowl, leaving about ¾ -inch of bread inside the crust. Spread hummus all over inside of bread bowl and inside the cap.  Place spinach leaves at the bottom of bread bowl and layer with meat, cheese, cucumber, grated carrot, red pepper and avocado.   Place cap back on sandwich and wrap tightly with plastic wrap.  Refrigerate for at least 2 hours or overnight.  To serve, remove plastic wrap and cut into 8 wedges.
